  • 3 tomatoes, chopped

  • 1 green chili, chopped
  • 1/2 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 1/2 cup coconut milk
  • 1 teaspoon coriander powder
  • 2 tablespoons olive oil
  • 1 teaspoon cumin powder
  • Salt to taste

Directions:

Toss cubed tofu with olive oil, turmeric powder, garam masala, salt, and pepper in a bowl. Heat a pan over medium heat and cook the tofu until golden brown on all sides. Set aside. In the same pan, add one tablespoon of olive oil. Add cumin seeds and let them splutter. Add chopped onions and sauté until translucent. Add minced garlic, grated ginger, and chopped green chili.
