Vegetarian Palak Paneer

Gluten-Free, Vegan, Serves 4

For the Tofu Paneer:

  • 1 block extra-firm tofu, pressed and cubed
  • 1 tablespoon olive oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt and pepper to taste

For the Palak Sauce:

  • 1 bunch fresh spinach, washed and chopped
  • 1 large onion, finely chopped
  • 3 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 green chili, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons olive oil
  • 1/2 cup coconut milk


In a bowl, toss cubed tofu with olive oil, turmeric powder, garam masala, salt, and pepper. Heat a pan over medium heat and cook the tofu until golden brown on all sides. Set aside. In the same pan, add 1 tablespoon of olive oil. Add cumin seeds and let them splutter. Add chopped onions and sauté until translucent. Add minced garlic, grated ginger, and chopped green chili. Sauté for another minute. Add chopped tomatoes and cook until they become soft and the oil starts to separate. Stir in coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Cook for 2-3 minutes. Add chopped spinach and cook until wilted. Allow the mixture to cool slightly, then transfer it to a blender. Blend until smooth. Return the blended mixture to the pan and heat over medium heat. Stir in coconut milk and mix well. Add the cooked tofu paneer to the spinach mixture and let it simmer for a few minutes until everything is heated through. Serve Vegan Palak Paneer over rice or with gluten-free naan.
