Cucumber Salad

Gluten-Free, Vegan Serves 2 1 English cucumber cubed 2 cups cherry tomatoes sliced 1 avocado cubed 2 Tbsp Basil chopped ½ cup vegan mozzarella cubed 2 Tbsp Balsamic Vinegar reduction Directions: In a large bowl combine all the ingredients listed above except for the vinegar reduction. Spoon out your portions and top with the reduction.
