Carrot Celery Soup

Gluten-Free, Vegan, Serves 4

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups carrots, peeled and sliced
  • 3 cups celery, chopped
  • 1 medium potato, peeled and diced
  • 6 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Directions:

In a large pot, heat olive oil over medium heat. Add chopped onions and garlic. Sauté until onions are translucent. Add sliced carrots, chopped celery, and diced potato to the pot. Cook for 5-7 minutes, stirring occasionally. Pour in the vegetable broth, ground cumin, and ground coriander. Bring the mixture to a boil. Reduce heat to low, cover the pot, and let the soup simmer for about 15-20 minutes or until the vegetables are tender. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth. Be cautious when blending hot liquids. Season the soup with salt and pepper according to your taste. Stir well. Garnish with chopped fresh parsley, if desired. Ladle the soup into bowls and serve hot.
