Salted Bourbon Apple Pear Crumble

Gluten-Free, Vegan, Serves 8

For the filling:

  • 4 apples, peeled, cored, and thinly sliced
  • 4 pears, peeled, cored, and thinly sliced
  • 1/4 cup coconut sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 2 tablespoons bourbon (optional)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

For the crumble topping:

  • 1 cup gluten-free rolled oats
  • 1/2 cup almond flour
  • 1/2 cup chopped walnuts
  • 1/4 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Directions:

Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish. In a large mixing bowl, combine the sliced apples, sliced pears, coconut sugar, cornstarch, lemon juice, bourbon (if using), ground cinnamon, ground nutmeg, and salt. Toss everything together until the fruit is well coated with the mixture. Transfer the fruit mixture to the greased baking dish and spread it out evenly. In another bowl, combine the rolled oats, almond flour, chopped walnuts, coconut sugar, melted coconut oil, ground cinnamon, and salt. Mix well until the ingredients are combined and crumbly.

Sprinkle the crumble topping evenly over the fruit mixture in the baking dish. Bake in the preheated oven for about 35-40 minutes, or until the fruit is tender and the topping is golden brown and crispy. Remove from the oven and let it cool slightly before serving. Serve the Salted Bourbon Apple Pear Crumble warm or at room temperature.
