French Onion Pizza

Gluten-Free, Vegan, Serves 10

Pizza Dough:

  • 3 cups gluten-free all-purpose flour
  • 2 tsp instant yeast
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 1/4 cups warm water

French Onion Topping:

  • 3 large onions, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Pizza Sauce:

  • 1 cup tomato sauce
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste

Pizza Assembly:

  • 1 cup vegan cheese shreds (such as vegan mozzarella or cheddar)
  • Fresh thyme leaves for garnish (optional)

Directions:

Preheat your oven to 425°F (220°C). Prepare a baking sheet or pizza stone by lining it with parchment paper. In a large mixing bowl, combine the gluten-free all-purpose flour, instant yeast, salt, and garlic powder. Mix well. Add the olive oil and warm water to the dry ingredients. Mix until a dough forms. Transfer the dough to a floured surface and knead for about 5 minutes, until the dough becomes smooth and elastic. Roll out the dough into a 12-inch circle or the desired pizza shape and transfer it to the prepared baking sheet or pizza stone. In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions and cook until they become soft and caramelized, about 15-20 minutes.

Stir in the balsamic vinegar, dried thyme, salt, and black pepper. Cook for an additional 5 minutes, then remove from heat. In a small bowl, mix together the tomato sauce, minced garlic, dried oregano, dried basil, salt, and pepper to make the pizza sauce. Spread the pizza sauce evenly over the prepared pizza dough. Top the pizza with the caramelized onions, spreading them evenly across the surface. Sprinkle the vegan cheese shreds over the onions. Bake the French Onion Pizza in the preheated oven for 15-20 minutes, or until the crust is golden brown and the cheese has melted. Once done, remove the pizza from the oven and let it cool for a few minutes. Garnish with fresh thyme leaves, if desired. Slice the pizza into 10 pieces and serve warm.
