Grilled Lemon Ricotta Pizza

Gluten-Free, Vegan, Serves 8

For the Gluten-Free Pizza Crust:

  • 2 cups gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup coconut milk
  • 2 tablespoons olive oil

For the Toppings:

  • 1 cup vegan ricotta cheese
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup lemons, sliced
  • 1 cup baby spinach leaves
  • Red pepper flakes

Directions:

In a large bowl, whisk together gluten-free flour, baking powder, and salt. Add milk and olive oil to the dry ingredients. Mix until a dough forms. Divide the dough into eight equal portions and shape each into a ball. On a lightly floured surface or between two sheets of parchment paper, roll out each dough ball into a thin round crust. Preheat your grill to medium-high heat. Place the rolled-out pizza crusts directly on the preheated grill. Cook for 2-3 minutes per side or until they have grill marks and are cooked through. In a bowl, mix vegan ricotta cheese, lemon zest, lemon juice, olive oil, minced garlic, salt, and pepper. Spread the lemon ricotta mixture over each grilled pizza crust. Top with lemon slices and baby spinach. Place the topped pizzas back on the grill for 2-3 minutes or until the vegan ricotta is slightly melted and the toppings are heated through. Remove from the grill, sprinkle with red pepper flakes if desired, and serve immediately.
