Creamy Zucchini Blueberry Smoothie

Gluten-Free, Vegan, Serves 2

  • 1 cup frozen blueberries
  • 1/2 medium-sized zucchini, chopped
  • 1 ripe banana
  • 1/2 cup unsweetened almond milk
  • 1/2 cup coconut water
  • 1 tablespoon chia seeds
  • 1 tablespoon almond butter
  • Ice cubes


If you haven’t already, chop the zucchini into smaller pieces. Peel and chop the ripe banana. In a blender, combine the blueberries, chopped zucchini, banana, almond milk, coconut water, chia seeds (if using), and almond butter. Blend until smooth and creamy. If the smoothie is too thick, you can add more almond milk or coconut water to reach your desired consistency. Pour the smoothie into glasses. If you like, you can add ice cubes for a colder drink.
