Cinnamon Sweet Potato Smoothie

Gluten-Free, Vegan, Serves 2

  • 1 cup cooked and cooled sweet potato (peeled and diced)
  • 1 ripe banana
  • 1 1/2 cups unsweetened almond milk (or any non-dairy milk)
  • 2 tablespoons almond butter (or any nut butter)
  • 1 tablespoon maple syrup (adjust to taste)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon vanilla extract
  • Ice cubes (optional, for a colder smoothie)

Directions:

In a blender, combine the cooked sweet potato, ripe banana, almond milk, almond butter, maple syrup, ground cinnamon, ground nutmeg, and vanilla extract. Blend on high speed until the ingredients are well combined and the smoothie is creamy and smooth. If you prefer a colder smoothie, you can add a few ice cubes and blend again. Taste the smoothie and adjust the sweetness with more maple syrup, if needed. Pour the Cinnamon Sweet Potato Smoothie into two glasses. Garnish with a sprinkle of ground cinnamon on top, if desired. Serve immediately and enjoy!
