Chocolate Chip Raspberry Oatmeal Cookies

Gluten-Free, Dairy-Free, Serves 12

  • 2 cups rolled oats gluten-free
  • 1 ripe banana
  • 1/2 cup almond butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup fresh raspberries
  • 1/3 cup dairy-free chocolate chips


Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. In a blender or food processor, blend the rolled oats until they form a fine flour-like consistency. In a mixing bowl, mash the ripe banana. Add almond butter, maple syrup, vanilla extract, cinnamon, and salt. Mix until well combined. Stir the blended oats into the wet mixture until you get a consistent dough-like texture. Gently fold in the fresh raspberries and chocolate chips, being careful not to break the raspberries too much. Scoop about 1 1/2 tablespoons of dough and place them on the prepared baking sheet. Flatten them slightly with your palm or a fork. Bake the cookies in the preheated oven for 12-15 minutes or until they turn golden around the edges. Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
