Ingredients:

For the Trifle Chocolate Cake:

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup coconut oil, melted
  • 1/2 cup agave nectar
  • 2 flax eggs
  • 1 teaspoon vanilla extract
  • 1 cup almond milk

For the Trifle Dairy-Free Chocolate Mousse:

  • 2 ripe avocados
  • 1/2 cup cocoa powder
  • 1/2 cup agave nectar
  • 1 teaspoon vanilla extract
  • A pinch of salt

For the Berry Layer:

  • 4 cups mixed berries

For Assembly:

  • Whipped coconut cream

Directions:

Preheat your oven to 350°F (180°C) and line a baking dish with parchment paper. Mix ground flaxseed with water in a small bowl to create flax eggs. Let it sit for 5-10 minutes until it thickens. Whisk together almond flour, coconut flour, cocoa powder, baking soda, and salt in a large bowl. Whisk together melted coconut oil, maple syrup, or agave nectar, prepared flax eggs, vanilla extract, and almond milk in another bowl. Combine wet and dry ingredients and mix until smooth. Pour the batter into the prepared baking dish and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Allow the cake to cool completely. Combine ripe avocados, cocoa powder, maple syrup or agave nectar, vanilla extract, and a pinch of salt in a blender. Blend until smooth and creamy. Once the chocolate cake has cooled, cut it into small cubes. In serving glasses or a trifle dish, start with a layer of chocolate cake cubes, followed by a layer of dairy-free chocolate mousse and a layer of mixed berries. Repeat the layers until you reach the top of the glasses or dish. Finish the trifle by topping it with dairy-free whipped coconut cream. Place the trifle in the refrigerator for at least 2 hours to allow the flavors to meld. Serve chilled.
