Cherry Breakfast Bars

Gluten-Free, Vegan, Serves 12

For the Base and Topping:

  • 2 cups gluten-free oats
  • 1 cup almond flour
  • 1/2 cup coconut oil, melted
  • 1/3 cup agave nectar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the Cherry Filling:

  • 2 cups fresh or frozen cherries, pitted and halved
  • 2 tablespoons agave nectar
  • 1 tablespoon chia seeds
  • 1 tablespoon lemon juice


Preheat your oven to 350°F (175°C). Grease or line a 9×9-inch baking dish with parchment paper. In a saucepan, combine cherries, maple syrup or agave nectar, chia seeds, and lemon juice. Cook over medium heat, stirring frequently, until the cherries break down and the mixture thickens (about 8-10 minutes). Remove from heat and let it cool. In a large bowl, combine gluten-free oats, almond flour, melted coconut oil, maple syrup or agave nectar, vanilla extract, and salt.

Mix until everything is well combined. Press two-thirds of the oat mixture into the bottom of the prepared baking dish to form the base. Spread the cherry filling evenly over the oat base. Sprinkle the remaining oat mixture over the cherry filling as the topping. Bake in the preheated oven for 25-30 minutes or until the top is golden brown. Allow the bars to cool completely in the baking dish before slicing into squares.
