Banana Caramel Cupcakes

Gluten-Free, Dairy-Free, Serves 12

For the Cupcakes:

  • 2 ripe bananas, mashed
  • 1/3 cup melted coconut oil
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Caramel Cream Cheese Frosting:

  • 1/2 cup dairy-free cream cheese
  • 1/4 cup vegan butter, softened
  • 1/4 cup coconut caramel sauce
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract


Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners. In a mixing bowl, whisk together mashed bananas, melted coconut oil, coconut sugar, eggs, and vanilla extract until well combined. In a separate bowl, sift together the gluten-free flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix. Spoon the batter into the prepared cupcake liners, filling each about 2/3 full. Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely before frosting. In a mixing bowl, beat dairy-free cream cheese and vegan butter until creamy. Add coconut caramel sauce, powdered sugar, and vanilla extract. Beat until smooth and fluffy. Once the cupcakes are completely cooled, frost them generously with the caramel cream cheese frosting. Drizzle a little extra caramel sauce on top of the frosted cupcakes for added flavor and decoration.
