Gluten-Free, Vegan, Serves 12

Ingredients:

For the Manicotti:

  • 12 gluten-free manicotti shells
  • 1 tablespoon olive oil
  • 1 package (14 oz) firm tofu, drained and pressed
  • 1 cup dairy-free ricotta cheese
  • 1/2 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

For the Marinara Sauce:

  • 2 cans (28 oz each) crushed tomatoes
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Directions:

Cook the gluten-free manicotti shells according to the package instructions. Drain and set aside. In a large mixing bowl, crumble the pressed tofu using your hands. Add dairy-free ricotta, nutritional yeast, minced garlic, dried oregano, dried basil, salt, and pepper. Mix well until combined. Preheat the oven to 375°F (190°C). Use a spoon to fill each cooked manicotti shell with the tofu mixture. In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.

Pour in the crushed tomatoes, dried oregano, dried basil, salt, and pepper. Stir well. Simmer the sauce for 15-20 minutes, allowing the flavors to meld. Spread a thin layer of marinara sauce on the bottom of a baking dish. Arrange the stuffed manicotti shells in the dish. Pour the remaining marinara sauce over the top. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes or until heated through. Once baked, remove it from the oven and let it cool for a few minutes before serving. Optionally, garnish with fresh basil or parsley before serving.
