Bourbon Glazed Peach Fritters

Gluten-Free, Vegan, Serves 12

  • 2 cups gluten-free all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup coconut sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsweetened almond milk
  • 1/2 cup unsweetened applesauce
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 2 ripe peaches, diced
  • Coconut oil, for frying

For the bourbon glaze:

  • 1/2 cup powdered sugar
  • 1 tbsp bourbon
  • 1-2 tbsp unsweetened almond milk

Directions:

In a large bowl, whisk together the gluten-free all-purpose flour, almond flour, coconut sugar, baking powder, and salt. In a separate bowl, whisk together the unsweetened almond milk, unsweetened applesauce, apple cider vinegar, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until well combined. Fold in the diced peaches. Heat a large skillet over medium heat and add enough coconut oil to coat the bottom.

Using a cookie scoop or spoon, drop the batter by tablespoonfuls into the hot oil. Fry for 2-3 minutes per side, until golden brown. Repeat with the remaining batter. In a small bowl, whisk together the powdered sugar, bourbon, and 1 tablespoon of almond milk. If the glaze is too thick, add more almond milk, 1 tablespoon at a time, until the desired consistency is reached. Drizzle the bourbon glaze over the warm fritters and serve immediately.
