Banana Nut Pancakes

Gluten-Free, Vegan, Serves 4

  • 2 ripe bananas
  • 1 cup gluten-free oat flour
  • 1/2 cup almond milk
  • 1 tablespoon ground flaxseeds + 3 tablespoons water
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/4 cup chopped nuts
  • Coconut oil or cooking spray
  • Fresh banana slices and chopped nuts
  • Pure maple syrup

Directions:

In a small bowl, prepare the flax egg by mixing one tablespoon of ground flaxseeds with three tablespoons of water. Let it sit for a few minutes until it thickens. In a mixing bowl, mash the ripe bananas until smooth. Add the oat flour, almond milk, prepared flax egg, baking powder, ground cinnamon, and vanilla extract to the mashed bananas. Mix well to form a smooth pancake batter. Gently fold the chopped nuts into the pancake batter. Preheat a non-stick skillet or griddle over medium heat. Lightly grease the surface with coconut oil or cooking spray. Pour about 1/4 cup of the pancake batter onto the preheated skillet to form each pancake. Use the back of a spoon to spread the batter into a round shape.

Cook the pancakes for 2-3 minutes on one side or until small bubbles form on the surface. Flip the pancakes and cook for an additional 1-2 minutes or until golden brown and cooked through. Transfer the cooked pancakes to a plate and cover them to keep warm while you cook the remaining batter. If desired, serve the Banana Nut Pancakes with fresh banana slices and chopped nuts as toppings. Drizzle the pancakes with pure maple syrup or agave before serving.
