Winter Citrus Kale Salad

Gluten-Free, Vegan, Serves 4

For the salad:

  • 1 bunch kale, stems removed and leaves chopped
  • 2 oranges, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 1 avocado, peeled, pitted, and sliced
  • 1/4 cup pomegranate arils
  • 1/4 cup chopped walnuts or almonds

For the orange vinaigrette:

  • Juice of 1 orange
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon maple syrup or agave nectar
  • Salt and pepper to taste

Directions:

In a large bowl, add the chopped kale leaves. Massage the kale gently with your hands for a minute or two to help soften the leaves and make them more tender. Arrange the kale on a serving platter or individual plates. Arrange the orange and grapefruit segments, avocado slices, pomegranate arils, and chopped nuts on top of the kale. In a small bowl, whisk together the orange juice, extra-virgin olive oil, apple cider vinegar, Dijon mustard, maple syrup or agave nectar, salt, and pepper to create the orange vinaigrette.
