Winter Citrus Kale Salad

Gluten-Free, Vegan, Serves 4

For the salad:

  • 1 bunch kale, stems removed and leaves chopped
  • 2 oranges, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 1 avocado, peeled, pitted, and sliced
  • 1/4 cup pomegranate arils
  • 1/4 cup chopped walnuts or almonds

For the orange vinaigrette:

  • Juice of 1 orange
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon maple syrup or agave nectar
  • Salt and pepper to taste

In a large bowl, add the chopped kale leaves. Massage the kale gently with your hands for a minute or two to help soften the leaves and make them more tender. Arrange the kale on a serving platter or individual plates. Arrange the orange and grapefruit segments, avocado slices, pomegranate arils, and chopped nuts on top of the kale. In a small bowl, whisk together the orange juice, extra-virgin olive oil, apple cider vinegar, Dijon mustard, maple syrup or agave nectar, salt, and pepper to create the orange vinaigrette. Drizzle the orange vinaigrette over the salad just before serving, or serve it on the side. Enjoy this refreshing and vibrant Winter Citrus Kale Salad as a nutritious and delicious meal!
