  • 4 2-inch slices of gluten-free bread
  • 1/2 cup vegan ricotta cheese
  • 1/4 cup fresh raspberries, mashed
  • 1/4 cup unsweetened almond milk
  • 1 tbsp ground flaxseed
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp vegan butter or coconut oil
  • Powdered sugar for topping
  • Additional fresh raspberries for topping

Directions:

Mix the vegan ricotta cheese and mashed raspberries in a small bowl until well combined. Cut a pocket in the middle of each slice of bread. Stuff each pocket with the raspberry ricotta mixture and press the edges together to seal. Whisk together the almond milk, ground flaxseed, vanilla extract, cinnamon, and nutmeg in a shallow dish until well combined.

Heat a non-stick skillet over medium heat and melt the vegan butter or coconut oil in the pan. Bang Bang Shrimp Tacos

Gluten-Free, Dairy-Free, Serves 4

For the Shrimp:
  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup gluten-free all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp coconut oil, for frying
For the Sauce:
  • 1/2 cup mayonnaise (vegan if needed)
  • 2 tbsp hot sauce (use a gluten-free brand if needed)
  • 1 tbsp honey or agave nectar
  • Juice of 1/2 lime
For the Tacos:
  • Corn tortillas
  • Shredded cabbage
  • Diced avocado
  • Chopped cilantro
  • Lime wedges, for serving

Directions:

Whisk together the gluten-free flour, garlic powder, onion powder, paprika, salt, and pepper in a shallow dish. Heat the coconut oil in a large skillet over medium-high heat. Dredge the shrimp in the flour mixture, shaking off any excess. Fry the shrimp in the hot oil until golden brown and cooked through, about 2-3 minutes per side. Transfer the cooked shrimp to a paper towel-lined plate to drain excess oil.

Whisk together the mayonnaise, hot sauce, honey, and lime juice in a small bowl until smooth. Warm the corn tortillas in the microwave or on a skillet to assemble the tacos. Add a spoonful of the sauce to each tortilla, followed by a few pieces of shrimp, shredded cabbage, diced avocado, and chopped cilantro. Serve with lime wedges on the side.

Thai Summer Noodle Stir Fry

Gluten-Free, Vegan, Serves 4

  • 8 oz gluten-free rice noodles
  • 2 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 small onion, chopped
  • 1 red bell pepper, sliced
  • 1 cup snow peas
  • 1 cup carrots, sliced
  • 1 cup broccoli florets
  • 1/2 cup Thai basil leaves
  • 1/4 cup cilantro, chopped
  • 1/4 cup roasted cashews, chopped
For the Sauce:
  • 2 tbsp tamari or coconut amino
  • 1 tbsp maple syrup
  • 1 tbsp lime juice
  • 1 tsp chili garlic sauce
  • 1 tsp sesame oil

Directions:

Cook the rice noodles according to the package instructions until al dente. Drain and rinse with cold water. Heat the vegetable oil over high heat in a large wok or skillet. Add the garlic and onion and stir fry for 1-2 minutes until fragrant. Add the bell pepper, snow peas, carrots, and broccoli and stir fry for 3-4 minutes until crisp-tender. Add the cooked rice noodles, Thai basil, cilantro, and cashews to the wok and combine.

Whisk together the tamari, maple syrup, lime juice, chili garlic sauce, and sesame oil in a small bowl. Pour the sauce over the noodle, stir fry, and stir to coat evenly. Cook for another 1-2 minutes until the sauce is heated and the flavors are well combined. If desired, serve the Thai Summer Noodle Stir Fry hot, garnished with extra Thai basil leaves, cilantro, and chopped cashews.

Chicken Tikka Masala

Gluten-Free, Dairy-Free, Serves 4

  • 1 lb boneless chicken breast, cut into bite-size pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp garam masala
  • 1/2 tsp cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup coconut cream
  • Salt, to taste
  • 1 tbsp olive oil
  • Fresh cilantro, chopped (for garnish)

Directions:

Mix the cumin, coriander, turmeric, paprika, garam masala, and cayenne pepper in a bowl. Using a separate bowl, add the chicken pieces and sprinkle the spice mixture on top. Mix well so that the chicken is evenly coated with the spices. Heat the olive oil in a large pan over medium-high heat. Add the onions and garlic and sauté for a few minutes until the onions are translucent. Add the chicken to the pan and cook for 5-7 minutes or until the chicken is no longer pink. Add the diced tomatoes to the pan and stir well. Let the mixture simmer for 10-15 minutes until the sauce has thickened. Pour in the coconut cream and stir to combine. Add salt to taste. Let the chicken tikka masala simmer for another 5-10 minutes until the sauce has thickened to your liking. Serve hot, garnished with fresh cilantro.
