Gluten-Free, Vegan, Serves 6
- 6 cups mixed greens (spinach, kale, arugula)
- 1 large apple, thinly sliced
- 1 cup pomegranate seeds
- 1/2 cup chopped cucumber
- 1/4 cup chopped red onion
- 1/4 cup chopped walnuts or almonds
- 1/4 cup pumpkin seeds
For the dressing:
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon maple syrup
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Directions:
In a large salad bowl, combine the mixed greens, sliced apple, pomegranate seeds, chopped cucumber, chopped red onion, chopped walnuts or almonds, and pumpkin seeds. In a small bowl, whisk together the extra-virgin olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper to make the dressing. Pour the dressing over the salad and toss everything together until well coated. Divide the Superfood Salad with Apple and Pomegranate among 6 serving plates. Serve immediately and enjoy!
