Rejuvenating Winter Salad

Gluten-Free, Vegan, Serves 4

For the Salad:

  • 4 cups mixed salad greens
  • 6 fresh figs, sliced
  • 1 cup red grapes, halved
  • 1/2 cup pomegranate arils
  • 1/4 cup chopped walnuts
  • 1/4 cup vegan feta cheese, crumbled

For the Lemon Ginger Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon pure maple syrup
  • Salt and pepper, to taste


In a large salad bowl, combine the mixed salad greens, sliced figs, halved red grapes, pomegranate arils, chopped nuts, and crumbled vegan feta cheese. In a small bowl, whisk together the extra-virgin olive oil, freshly squeezed lemon juice, grated ginger, and pure maple syrup or agave nectar. Season with a pinch of salt and pepper. Drizzle the Lemon Ginger Dressing over the salad ingredients in the bowl. Gently toss the salad to coat all the ingredients with the dressing.
