Gluten-Free, Vegan, Serves 6
Ingredients:
- 2 cups gluten-free all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 cup unsweetened applesauce
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 2 ripe peaches, peeled and chopped
- 1/2 cup chopped pecans
Directions:
Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper. In a mixing bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, and cinnamon until well combined. In a separate mixing bowl, stir together the applesauce, maple syrup, melted coconut oil, and vanilla extract until smooth. Add the dry ingredients to the wet mixture and stir until just combined.
Fold in the chopped peaches and pecans until evenly distributed throughout the batter. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean. Remove the bread from the oven and let it cool for at least 10 minutes before slicing and serving.
