Peach Baked Oatmeal

Gluten-Free, Vegan, Serves 6

  • 2 cups gluten-free rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 cups unsweetened almond milk
  • 1/3 cup maple syrup
  • 2 tablespoons coconut oil, melted
  • 2 teaspoons vanilla extract
  • 2 ripe peaches, sliced

Directions:

Preheat the oven to 375°F (190°C) and lightly grease an 8×8 inch baking dish. In a mixing bowl, combine the oats, baking powder, cinnamon, nutmeg, and salt. In another mixing bowl, whisk together the almond milk, maple syrup, melted coconut oil, and vanilla extract. Add the wet ingredients to the dry ingredients and mix well. Fold in the sliced peaches. Pour the mixture into the prepared baking dish. Bake for 35-40 minutes or until the top is golden brown and the oatmeal is set. Remove from the oven and let it cool for a few minutes before serving. Serve hot or cold with additional sliced peaches, maple syrup, or any other toppings you desire.
