Orange Yogurt Cake

Gluten-Free, Dairy-Free, Serves 12

For the cake:

  • 2 cups gluten-free all-purpose flour
  • 1 cup coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup coconut yogurt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup freshly squeezed orange juice
  • Zest of 1 orange
  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract

For the orange glaze:

  • 1 cup powdered sugar
  • 2 tablespoons freshly squeezed orange juice
  • Zest of 1 orange

Directions:

Preheat your oven to 350°F (175°C). Grease a 9×9-inch square baking pan or line it with parchment paper for easy removal. In a large mixing bowl, whisk together the gluten-free all-purpose flour, coconut sugar, baking powder, baking soda, and salt. In a separate bowl, mix together the dairy-free yogurt, unsweetened applesauce, freshly squeezed orange juice, orange zest, melted coconut oil, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix the batter. Transfer the batter into the prepared baking pan and spread it out evenly.

Bake the cake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a cooling rack to cool completely. Prepare the orange glaze by whisking together the powdered sugar, freshly squeezed orange juice, and orange zest until smooth. Once the cake is completely cool, drizzle the orange glaze over the top of the cake. Let the glaze set for a few minutes before slicing and serving.
