Gluten-Free, Vegan, Serves 4

  • 8 oz (225g) gluten-free pasta of your choice
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz (225g) mushrooms, sliced cremini
  • 1 tablespoon fresh thyme leaves
  • 2 medium carrots, julienned
  • 1 cup vegetable broth
  • 2 tablespoons gluten-free all-purpose flour
  • 1 cup canned coconut milk (full-fat)
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Directions:
