Honey Roasted Salmon With Potatoes

Gluten-Free, Dairy-Free, Serves 6

For the Honey Roasted Salmon:

  • 6 salmon fillets (about 4-6 oz each)
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh rosemary sprigs, for garnish

For the Rosemary Roasted Potatoes:

  • 1.5 lbs (680g) baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • Salt and pepper, to taste

Directions:

Preheat the oven to 425°F (220°C). In a bowl, toss the halved or quartered baby potatoes with olive oil, chopped rosemary, salt, and pepper. Spread the potatoes on a baking sheet in a single layer. Roast the potatoes in the preheated oven for about 25-30 minutes or until they are golden and crispy, flipping halfway through. In a bowl, whisk together olive oil, honey, lemon juice, minced garlic, salt, and pepper to create the marinade. Place the salmon fillets in a resealable plastic bag or a shallow dish. Pour the marinade over the salmon, ensuring each fillet is coated. Marinate for about 15-20 minutes. Preheat a skillet over medium-high heat. Add a bit of oil or use a non-stick skillet.

Remove the salmon fillets from the marinade and place them in the skillet. Reserve the marinade. Cook the salmon for about 3-4 minutes on each side, or until cooked to your preferred level of doneness and slightly caramelized. In the last few minutes of cooking, pour the reserved marinade over the salmon fillets and let it thicken slightly. Arrange the honey roasted salmon fillets on a serving platter. Garnish with fresh rosemary sprigs for an aromatic touch. Serve the salmon alongside the rosemary roasted potatoes.
