  • 4 cups baby spinach leaves
  • Juice of 1 lemon
  • Fresh parsley, chopped

Directions:

Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 3-4 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant. Add diced carrots, celery, and potato to the pot. Stir well and cook for 5 minutes until slightly softened. If using, add diced ham to the pot and cook for an additional 2-3 minutes. Pour vegetable broth into the pot and bring to a simmer.
