  • 1.5 lbs boneless, skinless chicken breasts, diced
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup carrots, diced
  • 4 cups chicken broth
  • 1 cup celery, diced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 4 cups fresh spinach, chopped
  • 1 teaspoon dried rosemary
  • Juice of 1 lemon
  • 1 teaspoon salt
  • 14 oz can coconut milk (full-fat)
  • 1 cup canned white beans, rinsed
  • Fresh basil for garnish


In a large pot, heat olive oil over medium heat. Add chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5 minutes. Add diced chicken to the pot and cook until browned on all sides. Stir in dried oregano, thyme, rosemary, salt, and black pepper. Pour in the chicken or vegetable broth, scraping the bottom of the pot to release any flavorful bits. Bring the soup to a simmer. Let the soup simmer for 15-20 minutes or until the chicken is cooked and the vegetables are tender.
