Creamy Artichoke Chicken Marsala

Gluten-Free, Dairy-Free, Serves 6

For the Creamy Artichoke Chicken Marsala:

  • 6 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1 cup artichoke hearts, drained and chopped
  • 1 cup dairy-free unsweetened almond milk
  • 1/2 cup vegetable broth
  • 1/2 cup Marsala wine
  • 2 tablespoons nutritional yeast
  • 2 tablespoons fresh chopped parsley

For the Orzo:

  • 1.5 cups gluten-free orzo pasta
  • Salt, for cooking

Directions:

Bring a large pot of salted water to a boil. Add the gluten-free orzo and cook according to the package instructions until al dente. Drain and set aside. Season the chicken breasts with salt and pepper on both sides. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes on each side or until they are cooked through and golden brown. Remove the chicken from the skillet and set aside. Add the sliced mushrooms and sauté in the same skillet until they release their moisture and become golden brown. Add the minced garlic and chopped artichoke hearts to the skillet. Sauté for another 1-2 minutes.

Pour in the dairy-free almond milk, vegetable broth, and Marsala wine. Stir to combine and bring to a gentle simmer. If using, sprinkle in the nutritional yeast for added flavor and creaminess. Return the cooked chicken breasts to the skillet and let them simmer in the sauce for a few more minutes, allowing the flavors to meld. Taste and adjust the seasoning with more salt and pepper if needed. Serve the Creamy Artichoke Chicken Marsala over a bed of cooked gluten-free orzo. Garnish with freshly chopped parsley for a burst of color and freshness.
