Creamed Feta Garlic Salmon

Gluten-Free, Dairy-Free, Serves 8

  • 8 salmon fillets
  • 1 cup dairy-free cream cheese
  • 1/2 cup dairy-free feta cheese, crumbled
  • 4 cloves garlic, minced
  • Juice of 1 lemon
  • 2 tbsp chopped fresh dill
  • Salt and pepper to taste
  • Lemon wedges, for serving
  • Fresh dill sprigs, for garnish

Directions:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the salmon fillets on the prepared baking sheet. Season with salt and pepper. In a mixing bowl, combine the dairy-free cream cheese, crumbled feta cheese, minced garlic, lemon juice, chopped fresh dill, salt, and pepper. Mix well to combine. Spoon the creamed feta garlic mixture evenly over each salmon fillet, spreading it to cover the top.

Bake the salmon in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Remove the salmon from the oven and let it rest for a few minutes. Serve the Creamed Feta Garlic Salmon with lemon wedges on the side. Garnish with fresh dill sprigs before serving.
