Citrus Apricot Energy Bliss Balls

Gluten-Free, Vegan, Serves 12

Ingredients:

  • 1 cup dried apricots
  • 1 cup pitted dates
  • Zest of 1 orange
  • Zest of 1 lemon
  • Juice of 1/2 orange
  • Juice of 1/2 lemon
  • 1 cup rolled oats gluten-free
  • 1/2 cup shredded coconut
  • 1/4 cup almond flour
  • 1 teaspoon vanilla extract
  • Pinch of salt

Directions:

Pit the dates if they’re not already pitted. Zest the orange and lemon, and squeeze the juice from both. Combine the dried apricots, pitted dates, orange zest, lemon zest, orange juice, and lemon juice in a food processor. Blend until the mixture forms a sticky paste. Add the rolled oats, shredded coconut, almond flour, vanilla extract, and a pinch of salt to the food processor with the apricot-date mixture. Pulse the mixture in the food processor until everything is well combined and forms a dough-like consistency.

It should stick together when pressed between your fingers. Use your hands to take small portions of the mixture and roll them into balls. If the mixture is too sticky, you can wet your hands slightly with water. Roll each bliss ball in shredded coconut until evenly coated. Place the bliss balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
