Gluten-Free, Dairy-Free, Serves 9
- 1/2 cup vegan butter melted
- 1 cup coconut brown sugar packed
- 2 tsp pure vanilla
- 1 large egg
- 3/4 cup coconut flour
- 1/4 cup almond flour
- 1 cup vegan dark chocolate chips
- 1/4 tsp salt
- 1 cup cherries pitted
Directions:
Preheat the oven to 350 degrees F. Line an 8×8 inch pan with parchment paper and spray with coconut oil. Mix the melted butter and brown sugar in a bowl until well combined. Add the egg and vanilla, and stir to combine. Next, stir in the flour and salt and stir until just combined. Don’t over-mix. Fold in the chocolate chips and cherries. Pour the batter into the pan and bake for 25-30 minutes or until the edges begin to pull away from the sides and the center is set. Allow the bars to cool in the pan for at least 1 hour before slicing and serving.
