Chai Chewy Bars

Gluten-Free, Dairy-Free, Serves 9

  • 1/2 tsp ginger ground
  • 3/4 tsp ground cardamom
  • 1/2 tsp ground pepper
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1 cup coconut flour
  • 1/4 tsp baking soda
  • 1 cup almond flour
  • 2/3 cup vegan butter melted
  • 1 tsp baking powder
  • 2 cups date sugar
  • 1 1/2 tsp pure vanilla
  • 2 large eggs

Topping:

  • 1 Tbsp vegan butter melted
  • 1/4 cup xylitol sugar
  • 1 tsp reserved spice mixture

Directions:

Preheat the oven to 350 degrees F. Pretreat an 8×8 inch pan with the non-stick option of choice. Combine all of the spices together in a small bowl and set aside (make sure to separate 1 tsp for topping). Next, combine flours, the bulk of the spice mixture (everything except 1 tsp), baking soda, and powder. Into a separate bowl, cream together butter, sugar, eggs, and vanilla. Stir the wet ingredients into the dry until no streaks of flour remain. Pour batter into the prepared pan and bake for 25 minutes. Wet crumbs sticking to the toothpick are okay. Combine the toppings together and brush over the bars.
