Baked Apple Cider Donuts

Gluten-Free, Vegan, Serves 12

  • 2 cups gluten-free all-purpose flour
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 1/2 cup apple cider
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 cup chopped apples

Directions:

Preheat the oven to 350°F (175°C). In a medium mixing bowl, whisk together the gluten-free all-purpose flour, almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In a separate mixing bowl, whisk together the applesauce, maple syrup, apple cider, melted coconut oil, and vanilla extract. Add the dry ingredients to the wet ingredients and mix until well combined. Fold in the chopped apples. Grease a donut pan with coconut oil. Spoon the batter into the donut pan, filling each mold 3/4 of the way. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Remove the donuts from the oven and let them cool in the pan for 5 minutes before removing them and placing them on a wire rack to cool completely.
