Apple Butter Pie

Gluten-Free, Vegan, Serves 12

  • 1 pre-made gluten-free pie crust
  • 2 cups unsweetened applesauce
  • 1/2 cup pure maple syrup
  • 1/4 cup cornstarch
  • 1/4 cup unsweetened almond milk
  • 2 tbsp apple cider vinegar
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • Coconut whipped cream (optional)

Directions:

Preheat the oven to 350°F. Roll out the pre-made gluten-free pie crust and place it in a 9-inch pie dish. Crimp the edges of the crust as desired. In a large mixing bowl, whisk together the applesauce, maple syrup, cornstarch, almond milk, apple cider vinegar, cinnamon, nutmeg, and salt until smooth and well combined. Pour the apple butter mixture into the prepared pie crust and smooth out the top with a spatula. Bake for 50-55 minutes, or until the edges of the crust are golden brown and the filling is set. Allow the pie to cool to room temperature before slicing and serving with coconut whipped cream, if desired.
