For the dough:
- 2 cups gluten-free all-purpose flour
- 1/2 cup coconut oil, softened
- 1 teaspoon vanilla extract
- 1/2 cup agave nectar
- 1/4 teaspoon salt
- 2-3 tablespoons cold water, if needed
For the chocolate filling:
- 1/2 cup dairy-free chocolate chips
- 2 tablespoons coconut cream
Directions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Combine the gluten-free all-purpose flour, softened coconut oil, agave nectar, vanilla extract, and salt in a mixing bowl. Mix until a dough forms. If the dough is too dry, add cold water, one tablespoon at a time, until it comes together. Roll out the dough on a lightly floured surface to about 1/4 inch thickness.
Use a round cookie cutter or the rim of a glass to cut out circles of dough about 3 inches in diameter. In a small saucepan, melt the dairy-free chocolate chips and coconut cream or coconut milk over low heat, stirring until smooth.
