Sweet Potato Salad (Vegan, Gluten Free)

Ingredients:

  • 11/2 lbs sweet potatoes cubed
  • 1/2 cup chopped celery
  • 1/2 cup diced red onion
  • 2 cups carrots cubed
  • 2 Tbs chopped parsley
  • 1 Tbs chopped dill
  • 1/2 cup vegan mayo soy-free
  • 2 Tbs white vinegar
  • 1 tsp dijon mustard
  • 1/2 tsp. Lack pepper
  • 1/2 paprika
  • 1/4 tsp cayenne powder
  • 1 Tbs coconut oil

Directions:

Roast potatoes and carrots in coconut oil and cayenne powder at 350 f for 20-30 minutes or until tender. Cool and place in large bowl with all other ingredients. Mix well to combine, serve chilled.
