Mint Chocolate Fudge Brownies

Gluten-Free, Dairy-Free, Serves 12

For the Brownies:

  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup coconut sugar
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup unsweetened applesauce
  • 1/4 cup coconut milk
  • 1 teaspoon vanilla extract

For the Mint Chocolate Layer:

  • 1/2 cup dairy-free chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 teaspoon peppermint extract

Directions:

Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal. Whisk together almond flour, cocoa powder, coconut sugar, baking soda, and salt in a bowl until well combined. Mix melted coconut oil, unsweetened applesauce, dairy-free milk, and vanilla extract in a separate bowl. Add the wet ingredients to the dry ingredients and stir until a smooth batter forms. Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

Remove from the oven and let the brownies cool completely in the pan. In a microwave-safe bowl, melt the dairy-free chocolate chips and coconut oil in 20-second intervals, stirring between intervals until smooth and melted. Stir in the peppermint extract until well combined. Once the brownies are completely cooled, spread the mint chocolate layer evenly over the top. Place the brownies in the refrigerator for about 15-20 minutes to allow the chocolate layer to set. Once the chocolate is set, use the parchment paper overhang to lift the brownies out of the pan. Place them on a cutting board and slice into squares.
