For the Brownies:

  • 1/2 cup coconut sugar
  • 1/4 teaspoon salt
  • 1/2 cup cocoa powder
  • 1/4 cup coconut oil, melted
  • 1 cup almond flour
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut milk

For the Mint Chocolate Layer:

  • 1/2 cup dairy-free chocolate chips
  • 1 tablespoon coconut oil
  • 1/2 teaspoon peppermint extract

Directions:

Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal. In a bowl, whisk together almond flour, cocoa powder, coconut sugar, baking soda, and salt until well combined.
