Kumquat Mojitos

Gluten-Free, Vegan, Serves 10

  • 10 ounces of fresh-squeezed Orange Juice
  • 1 quart Coconut Lime Water
  • 20 Kumquats halved
  • 1 cup Mint leaves
  • 2 Limes cut into 10 wedges
  • 1 ¾  cup Coconut Rum

Directions:

In a large pitcher, combine mint leaves and kumquats. I was using a wooden spoon to muddle the mixture. Pour orange juice, rum, water, and squeeze lime wedges into the pitcher. Add ice and serve chilled.
