Ingredients:

Gluten-Free, Vegan, Serves 6

  • 1 cup coconut yogurt
  • 2 medium-sized eggplants
  • 1 tablespoon coconut oil
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon chili powder
  • 1 teaspoon mustard seeds
  • Salt to taste
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, minced
  • 2 tomatoes, chopped
  • 1 teaspoon ground coriander
  • Fresh cilantro leaves for garnish

Directions:

Wash the eggplants and cut them into cubes. Soak the eggplant cubes in cold water for 10 minutes to remove bitterness. Drain and set aside—heat oil in a large skillet or pan over medium heat. Add the cumin seeds and mustard seeds. Let them sizzle for a few seconds until fragrant. Add the chopped onions to the skillet and sauté until they turn translucent, about 3-4 minutes.

Stir in the minced garlic and ginger, and cook for another 1-2 minutes until fragrant. Add the chopped tomatoes to the skillet and cook until they soften and release their juices, about 5-6 minutes. Stir in the ground coriander, turmeric powder, and chili powder. Mix well to combine. Add the cubed eggplants to the skillet and stir to coat them with the spices.

Cook for 5-7 minutes, stirring occasionally, until the eggplants are partially cooked. Pour in the dairy-free yogurt and mix well to combine with the eggplant mixture. Reduce the heat to low and let the curry simmer for another 5-7 minutes or until the eggplants are fully cooked and tender. Season the curry with salt to taste and garnish with fresh cilantro leaves.
