Hearty Turkey White Bean Chili

Gluten-Free, Dairy-Free, Serves 4

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 can (4 ounces) diced green chilies
  • 3 cups low-sodium vegetable broth
  • 1 cup frozen corn kernels
  • Salt and pepper to taste
  • Fresh cilantro, chopped
  • Sliced avocado

Directions:

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent. Add the minced garlic and ground turkey to the pot. Cook, breaking up the turkey with a spoon, until the turkey is browned and cooked through. Stir in the ground cumin, ground coriander, chili powder, and smoked paprika. Cook for an additional 1-2 minutes to toast the spices. Add the white beans, diced green chilies, and low-sodium vegetable broth to the pot. Stir to combine.

Bring the chili to a simmer and let it cook for about 10-15 minutes to allow the flavors to meld. Add the frozen corn kernels to the chili and cook for an additional 5 minutes.
