Gingerbread Coconut Overnight Oats

Gluten-Free, Vegan, Serves 4

For the overnight oats:

  • 1 1/2 cups gluten-free rolled oats
  • 1 1/2 cups unsweetened coconut milk
  • 2 tablespoons pure maple syrup
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt

For the toppings:

  • Chopped nuts
  • Shredded coconut
  • Dried cranberries or raisins
  • Fresh berries or sliced banana

Directions:

In a mixing bowl, combine the gluten-free rolled oats, unsweetened coconut milk, pure maple syrup, ground ginger, ground cinnamon, ground nutmeg, and a pinch of salt. Stir well to ensure all the ingredients are well combined. Divide the oat mixture evenly among four small jars or containers with lids. Cover the jars with their lids and refrigerate them overnight, or for at least 4 hours, to allow the oats to absorb the liquid and soften.
