Gluten-Free, Vegan, Serves 2
For the cranberry syrup:
- 1/2 cup fresh cranberries
- 1/2 cup water
- 1/4 cup coconut sugar
For the cocktail:
- 3 ounces (6 tablespoons) gin
- 1 ounce (2 tablespoons) cranberry syrup
- 1/2 ounce (1 tablespoon) fresh lemon juice
- Ice cubes
- Sparkling water or tonic water, chilled
- Fresh cranberries and rosemary sprigs, for garnish
Directions:
In a small saucepan, combine the fresh cranberries, water, and coconut sugar. Bring the mixture to a simmer over medium heat, stirring occasionally. Cook for about 5-7 minutes, or until the cranberries have softened and the sugar has dissolved. Remove from heat and let the mixture cool slightly. Use a fine-mesh sieve to strain the syrup, pressing the cranberries to extract as much liquid as possible. Discard the cranberry solids and set the syrup aside to cool completely.
In a shaker, combine the gin, cranberry syrup, and fresh lemon juice. Add ice cubes to the shaker and shake well to chill and mix the ingredients. Strain the cocktail mixture into two glasses. Top each glass with sparkling water or tonic water to your desired level of dilution and carbonation. Garnish each Frosted Cranberry Gin Cocktail with a few fresh cranberries and a sprig of rosemary. Serve the cocktails immediately and enjoy this refreshing and festive drink!
