French Silk Pie Cookies

Gluten-Free, Vegan, Serves 12

For the Brownie Cookie Base:

  • 1 1/2 cups almond flour
  • 1/4 cup cocoa powder
  • 1/4 cup pure maple syrup
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt

For French Silk Pie Molten Center:

  • 14 oz can full-fat coconut milk, chilled in the fridge overnight
  • 1/4 cup cocoa powder
  • 1/4 cup pure maple syrup
  • 1 teaspoon vanilla extract

Directions:

Open the chilled can of coconut milk without shaking it. Scoop out the thick coconut cream that has risen to the top and place it in a mixing bowl. Reserve the liquid for other uses. Add cocoa powder, pure maple syrup, and vanilla extract to the coconut cream. Use an electric mixer to whip the mixture until smooth and creamy. Start on low speed and gradually increase to high speed. Once the molten center is well whipped, transfer it into a silicone ice cube tray or small silicone molds. Freeze for at least 2 hours, or until solid.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper. In a mixing bowl, combine almond flour, cocoa powder, pure maple syrup, melted coconut oil, vanilla extract, and a pinch of salt. Mix until a dough forms. Take a portion of the cookie dough and flatten it into a disc in the palm of your hand. Place a frozen French Silk Pie molten center in the middle of the dough disc.
