Apple Oatmeal Bake

Gluten-Free, Vegan, Serves 8

  • 1 cup Gluten-Free Oats
  • 3 Tbsp Maple Syrup
  • 1 large Apple, Peeled and Diced
  • 1/2 tsp Baking Soda
  • 1 tsp Pure Vanilla
  • 1/2 tsp Baking Powder
  • 1 tsp Cinnamon
  • 3 Tbsp Vegan Greek Yogurt
  • 1 Tbsp Coconut Oil
  • 1/2 Cup Applesauce

Directions:

Preheat the oven to 350 degrees F. Put all of the ingredients into a blender reserving 1/4 cup of the oats and process until smooth. Remove from blender and fold in remaining oats. Treat the baking dish with non-stick of choice and pour batter into the dish. Bake for 20-30 minutes or until a toothpick comes out clean. After baking let cool and serve.

    1. No, any yogurt will work. I prefer to use Greek yogurt because it is thicker and helps keep everything together.
