Ingredients:

For the spicy crispy fish:
- 1 lb white fish fillets, cut into strips
- 1/2 cup gluten-free cornmeal
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons olive oil
For the cole slaw:
- 2 cups shredded cabbage
- 1 carrot, grated
- 2 tablespoons vegan mayonnaise
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
- 1 teaspoon agave syrup
For assembling:
- 8 small gluten-free corn tortillas
- Lime wedges, for serving
- Fresh cilantro leaves, for garnish
Directions:
Combine the gluten-free cornmeal, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper in a shallow dish. Pat the fish fillets dry with paper towels. Dip each fillet into the cornmeal mixture, pressing gently to coat both sides evenly. Heat olive oil in a large skillet over medium-high heat. Once hot, add the coated fish fillets to the skillet. Cook for about 3-4 minutes on each side or until golden brown and crispy. Remove from the skillet and place on a plate lined with paper towels to drain any excess oil.
